Mushroom & Pesto Omelette

They say breakfast is the most important meal of the day, and an omelette like this will make you want to eat breakfast all day, every day! Although you could make an omelette with a host of fillings, this fluffy, earthy and herby omelette will have you cracking eggs on eggs.


  • 4 x Eggs
  • 2 tbsp Saucery Classic Pesto
  • 2-3 x Mushrooms, finely chopped
  • 20g Grated cheddar cheese
  • 2 tsp Chilli flakes
  • 2 tbsp Olive oil
  • Salt, pepper, to season


  • Break the eggs into a bowl along with half the Saucery classic pesto, mushrooms, grated cheese, chilli flakes, salt and pepper. Beat well using an egg beater until fluffy and light.
  • Heat a non stick pan with half the olive oil. Pour in half of the beaten egg mixture and cook it, 2 mins per side. Continue the same with the remaining mixture. Serve hot.
