Refined oil – 2 tsp
Zucchini, cut in cubes– 1/4 medium
Bellpeppers (Red and Yellow), cut in cubes- 1/4 bellpeppers each
Aubergines, sliced and cut into 4 – ¼ small
Saucery Classic Pesto – 1 tbsp
Lettuce – 2 fresh leaves
Feta (crumbled) – 1 tbsp
Salt and pepper – to season
- Grill or pan fry the zucchini, bellpeppers and aubergines in oil.
- Combine with Saucery Classic Pesto, feta and lettuce. Check seasoning and serve chilled.
